Banana Empanadas Stuffed with Cheese

1 To make banana empanadas, the first thing you should do is boil the bananas in plenty of water. First, chop the bananas, without peeling, so that they cook faster.

Trick: Remember that in this recipe we talk about what is known as a plantain, not bananas.

2 When the ripe banana is already very soft, drain from the water, remove the peel and mash as if you wanted to make a puree.

3 Place the mashed banana in a bowl and add corn flour little by little until you get a soft and pliable dough. The idea is that the dough can be handled without problems, if it were just a banana it would be very sticky and would not be used to make empanadas.

4 Now, to form the banana empanadas, slightly moisten your hands and form balls with the dough. Crush each ball well and place a portion of grated cheese in the center. Then close forming a crescent and seal the edges with a fork.
