Banana and chocolate muffins recipe

Ingredients to make Banana and Chocolate Muffins:

  • 2 bananas
  • 110 grams of wheat flour (can be whole wheat)
  • 1 teaspoon of baking soda or baking powder
  • 1 tablespoon white or brown sugar
  • 2 tablespoons of chocolate chips
  • 40 milliliters of milk (can be vegetable)
  • 1 egg
  • 40 milliliters of olive oil

How to make Chocolate Banana Muffins:

  • Mix the flour with the baking soda and sugar in a bowl. If we use common flour, we sift it, while if we use whole wheat flour we will have to integrate air by stirring vigorously with some manual rods. Being a type of unrefined flour, it does not sift well. On the other hand, we preheat the oven to 180 ºC with heat above and below and place the paper muffin capsules in the molds.
  • Separately, lightly mash the bananas, since if we puree them the mass will be too dense. If we prefer, for this recipe for banana and chocolate muffins we can also use bananas, we just have to keep in mind that, since they are larger, one may be more than enough.
  • Add the egg and oil and integrate. If the muffins will be eaten by someone who is allergic to eggs or is vegan, don’t miss this article with the best egg substitutes.
  • Pour in the milk and continue mixing. Again, if there is a vegan or lactose intolerant person in the room, we can use non-dairy milk without problem. In fact, to make the banana and chocolate muffins taste even smoother and more delicious, we have used oat milk.
  • Add the flour mixed with the baking soda and sugar and integrate by making enveloping movements. If we don’t have baking soda, we can use baking powder to make the muffins fluffy.
  • Finally add the chopped chocolate. If you have chocolate chips, great, but if you don’t at the moment you can always take ounces from a tablet and crush them with a mortar. And if you prefer, you can use white chocolate.
  • We only have to distribute the dough between the molds! Since they are muffins and not cupcakes, we can fill the capsules to almost their full capacity. Likewise, we decorate with oat flakes and more pieces of chocolate. Then, we bake the banana and chocolate muffins for 20-25 minutes, or until we check that they are ready when performing the toothpick test.
  • When they are done, leave them for a few seconds, remove them from the mold and reserve them on a wire rackto cool completely. This way, the muffins won’t get soggy.
  • Ready! This banana and chocolate chip muffin recipeis so easy and delicious. In addition, the pieces of melted chocolate that we have used to decorate give the muffins an incredible touch.
