Baked Watermelon Carpaccio Recipe

One of those dishes that surprise everyone, the baked watermelon Carpaccio is without a doubt one of the vegan dishes that leaves more than one with their mouths open. Follow this easy recipe step by step and learn how to make a vegan Carpaccio with fruit, a fresh and delicious starter.

Ingredients to make Baked Watermelon Carpaccio:

  • 1 slice of watermelon without seeds
  • 1 jet of oil
  • 1 pinch of salt and pepper
  • 1 unit of Lemon (juice)
  • 1 handful of lettuce or greens
  • 1 piece of smoked vegan cheese

How to make Baked Watermelon Carpaccio:

The first step in preparing this vegan recipe is to prepare the watermelon. To do this, cut the slice about 8-10 centimeters thick and remove the entire part of the peel.

Prepare a baking tray with special paper. Place the watermelon on its side, drizzle with oil and add salt and pepper to taste. Take the watermelon to the oven and cook at 80º C. for about 35 minutes or until the watermelon is compact. You can check this by pressing with your fingertips; the watermelon should feel like raw meat. Remove the watermelon from the oven plate. Reserve the juice and let the baked watermelon cool. To do this, cover it with plastic wrap and keep it in the fridge.

Meanwhile, prepare the dressing for the vegan Carpaccio by mixing the watermelon juice with the lemon juice and a little olive oil.

When you are ready to serve, cut the watermelon into very thin slices and place them on a flat plate on a thin bed of greens. You can use lettuce, arugula or whatever you like.
