Baked Vegetarian Dumplings Recipe

Ingredients to make baked vegetarian dumplings:

  • 1 kilogram of frozen spinach
  • 1 jet of olive oil
  • 1 unit of Onion
  • 2 handfuls of cooked Chickpeas
  • 1 handful of raisins
  • 1 handful of sunflower seeds
  • 1 tablespoon of dietary yeast flakes
  • 1½ handfuls of fine textured soy
  • 2 tablespoons of soy cream
  • condiments
  • 1 pinch of garlic powder
  • 1 pinch of Nutmeg
  • 1 teaspoon of baslsamic vinegar
  • 1 tablespoon soy sauce
  • 1 pinch of Paprika
  • 1 pinch of Cumin
  • 1 tablespoon of Maggi Juice
  • 1 pinch of salt and pepper
  • empanadas
  • 1 handful of wafers for vegetable dumplings
  • 2 tablespoons vegetable margarine
  • 1 pinch of Turmeric
  • 1 pinch of saffron
  • 1 pinch of food coloring

How to make Baked Veggie Dumplings:

1 Start by cooking the spinach. To do this, chop the package of frozen spinach and take this to a pan with a trickle of olive oil. Cook over medium heat until they thaw completely and lose their water.

2 In another pan, heat another thread of olive oil and fry the finely chopped onion until soft. Then, add the onion along with the cooking oil to the pan with the spinach. Also add the chickpeas, raisins, sunflower seeds, yeast and textured soybeans.

3 Mix all these ingredients well and continue cooking until the grapes and soybeans are hydrated. The result should be a dry paste with practically no liquid, to achieve this you can add a little cornstarch or rice starch to the preparation of the spinach filling.

4 To finish the filling of the vegetarian dumplings, add the cream preparation and season to taste with the condiments from the list of ingredients. Let the filling come to room temperature and reserve in the fridge until completely cool.

5 You can get the dough for the empanadas in any supermarket where they sell vegan products or if you prefer you can make it yourself following the recipe for gluten-free empanada dough. When you have the dough, place a portion of filling in the center of each circle and form the typical crescent of empanadas.

Trick: If you don’t have a machine to make and seal empanadas, you can fold the empanada and press the edges with the help of a fork.

6 Melt the margarine and mix with the turmeric, saffron and coloring. Use this mixture to paint the vegetarian empanadas and cook in a preheated oven at 200ºC for about 15-20 minutes or until they are golden.
