Ingredients to make Baked Vegetable Stew:

  • 2 large or 3 medium red bell peppers
  • 2 eggplants
  • 2 medium onions
  • 4 ripe tomatoes (or 1 canned whole tomato)
  • Olive oil
  • Salt
  • Thyme
  • Oregano

How to make Baked Vegetable Stew:

  1. Cut the aborigine into slices and put them in a colander, salt them, cover with a plate and put a weight on top so that they release the excess water and do not come out bitter. Do it at least two hours before. Wash and clean the peppers and cut into strips. Peel the onion and cut into fine segments. Preheat the oven to 220º
  2. Put the onion, pepper and aborigine in a tray suitable for the oven, mix well with salt, and add the olive oil and a little thyme. When the oven is already hot at 220º, insert the tray, after 15 minutes open and mix well.
  3. When you check that the vegetables are already tender, add the tomato pieces, and salt them and the oregano. Let it finish cooking. The good thing is that you can keep it in the fridge for several days to accompany meat, eggs, fish or vegetables. You can also eat it as a starter or freeze it. You can put the vegetables on a plate in the center, put a couple of eggs, put it in the microwave for a maximum of 5 minutes or until the eggs are set to your liking.
