Baked Tenderloin Recipe (special for celebrations)

Ingredients to make baked tenderloin (special for celebrations):

  1. 1 loin (1.5kg approx.)
  2. 6 potatoes (medium)
  3. 2 carrots
  4. 2 onions
  5. 2 tomatoes
  6. 4 eggs
  7. Garlic
  8. parsley
  9. Salt
  10. Pepper
  11. oil
  12. White vinegar
  13. diners 6-8

How to make baked tenderloin (special for celebrations):

  • Vinaigrette: chop 4 garlic cloves and parsley. Add salt, pepper, oil and vinegar reserve.
  • Cut the potatoes into slices 2 cm thick, boil for 5 minutes and reserve.
  • Cut the onion and tomatoes into quarters and the carrots into medium julienne strips. Boil the 4 eggs.
  • With all the ingredients prepared, place the loin on a large baking sheet, salt and marinate with the vinaigrette, pass the eggs through the vinaigrette and wick the loin.
  • In a large bowl place the potatoes, onions, carrots and tomatoes and pour all the vinaigrette that we have left, place all the vegetables around the tenderloin and take to a hot oven for 45min, turn the tenderloin over, move the vegetables and bake for another 45min..
