This dish of baked spaghetti gratin with vegan cheese is a different and rich way to serve baked pasta when you can’t think of another way to make it. I have used this type of cheese so that the dish is vegan but you can opt for another if you like it better. It is very easy to do: first we will prepare a good stir-fry of vegetables, we will mix it with the spaghetti and we will gratin the final dish in the oven. Ingredients to make Baked Spaghetti Gratin:
- 250 grams of spaghetti
- 1 onion
- 1 red bell pepper
- 1 zucchini
- 2 garlic cloves
- ⅓ cup of cooked broad beans
- ⅓ cup grated cheese (I used vegan cheese)
- 1 pinch of salt
- 1 pinch of pepper
- 2 tablespoons of oil
- 1 teaspoon oregano
How to make Baked Spaghetti Gratin:
- Cook the spaghetti in boiling salted water and a splash of oil for 12-14 minutes or until “al dente”. Drain them and reserve.
- Chop the garlic, onion, bell pepper and zucchini. Heat a frying pan with oil and prepare a saucepan. Cook the vegetables until soft, stirring occasionally, and then add the broad beans and spaghetti. Cook another 3 minutes.
- Transfer the spaghetti with vegetables to an oven dish and cover them with grated cheese and sprinkle with oregano.
- Preheat oven with heat only on top to 180°C. Bake the spaghetti with cheese in the oven until melted
