Baked sole recipe on a bed of zucchini

Ingredients to make Baked Sole on a bed of zucchini:

  • zucchini
  • One sole per person
  • Parsley
  • mushrooms
  • pinions
  • balsamic vinegar

How to make Baked sole on a bed of zucchini:

  1. Zucchini strips are cut into straw type; they are fried with very strong oil so that they remain crunchy.
  2. Put the sole in the oven at 140º APROX with plenty of oil and parsley.
  3. The mushrooms are sautéed and removed, in that oil the pine nuts are slightly toasted and balsamic vinegar is added.
  4. To present, it is made like a bed with the zucchini and put the mushrooms to one side with some zucchini straws, the sole in the center on the zucchini bed and sauce with the pine nuts.
