How to make Baked sole on a bed of zucchini:
- Zucchini strips are cut into straw type; they are fried with very strong oil so that they remain crunchy.
- Put the sole in the oven at 140º APROX with plenty of oil and parsley.
- The mushrooms are sautéed and removed, in that oil the pine nuts are slightly toasted and balsamic vinegar is added.
- To present, it is made like a bed with the zucchini and put the mushrooms to one side with some zucchini straws, the sole in the center on the zucchini bed and sauce with the pine nuts.
