Baked sea bream recipe

Ingredients to make Dorado with salt in the oven:

  • 2 gold
  • 2 bay leaves
  • 1 lemon
  • 2 kilograms of coarse salt or baking salt

How to make Dorada with salt in the oven:

  1. Before starting to prepare the sea bream in salt in the oven, when buying it we have to ask the fishmonger to prepare it for us to cook it in salt.
  2. Once we have it, we must preheat the oven to 200 ºC. Put aluminum foil on a baking tray. And place a thick layer of salt on the aluminum foil (approximately one finger).
  3. Place a bay leaf and a lemon slice under each sea bream. Reserve the rest of the lemon.
  4. Cover the sea breams with a thick layer of salt, which should be very tight. Sprinkle the salt with a little water and squeeze the rest of the lemon on top.
  5. Put in the oven. The time depends on the weight of the sea bream in salt and also depends on the oven we have and the size of the sea bream. Normally we can remove them when the salt begins to acquire a brown color. That is usually about 25 or 30 minutes.
  6. When the sea bream in salt in the oven is done, the most cumbersome part comes: cover the tray with a clean kitchen cloth and hit it with the pestle or a tablespoon until the crust breaks.
  7. Carefully remove the fish, remove the head and bones, and plate.
