Although wild bass fishing takes place during the cold months, aquaculture has made it possible for us to savor its compact, mild-tasting meat all year round today. To prepare it, it is best to cook it in a simple way, such as steamed, grilled, baked, salted or en papillote, options, the latter two, which also ensure the aroma of the sea and the juiciness of the fish.

As a curious fact, we tell you that due to its dexterity and voracity for its prey, in old cookbooks this fish was known by the Latin name of “lupus”, “wolf”, from which “sea bass” comes.

In any case, this wonderful fish is a food rich in vitamins that cannot be missing from your diet, so here is a new step-by-step baked sea bass with almonds accompanied by sautéed raisins, pine nuts and spinach.

Ingredients to make Baked Sea Bass with Almonds:

  • 600 grams of clean sea bass
  • 4 tablespoons Almond powder
  • 1 bunch of spinach
  • 4 tablespoons of pine nuts
  • 4 tablespoons of raisins
  • 1 tablespoon of olive oil
  • 1 teaspoon salt
  • Ingredients for the sauce
  • 1 tablespoon toasted pine nuts
  • 4 tablespoons of olive oil

How to make Baked Sea Bass with Almonds:

  1. We start by cooking the sea bass fillets. Then, put a non-stick frying pan on the fire with a little oil to heat. Put a little salt on the fish and pass it through the pan.
  2. Remove it halfway through cooking, bread it with the almond powder and set aside. This process will give our dish a crispy touch.
  3. On the other hand, we clean and blanch the spinach, drain it well and reserve.
  4. Then, to finish preparing the garnish for our sea bass dish, we sauté the raisins and pine nuts in a pan with a drizzle of oil and add the spinach. We rectify salt if necessary.
  5. To make the sauce, chop the toasted pine nuts and mix this with olive oil.
  6. Nuts are ideal for making sauces.
  7. To finish cooking the sea bass, we put it in the oven with the grill on only until we see that the almond is golden brown.
  8. To assemble our dish of baked sea bass with almonds, we put the sautéed raisins, pine nuts and spinach in the bottom, the sea bass fillets on top and sauce.
