Baked salmon with potatoes and vegetables

Ingredients to make baked salmon with potatoes and vegetables:

  • 4 pieces of deep-frozen salmon fillets (approximately 200 g each)
  • 1 ox heart tomato
  • 1 large red bell pepper
  • 2 Italian green peppers
  • 1 onion
  • 4 garlic cloves
  • 1 splash of white wine
  • Extra virgin olive oil
  • Salt
  • 1 handful of Parsley
  • 4 large potatoes

How to make Baked Salmon with potatoes and vegetables:

  1. The first thing we will do to prepare this baked salmon with potatoes and vegetables is to defrost the salmon, if the pieces are frozen, preheat the oven to 180-200ºC on top and bottom and meanwhile, peel and cut the potatoes into slices thin, in such a way that we place them covering the base of the oven tray previously greased with oil and then salt them a little on top.
  2. Next, we wash and cut the red and green peppers into strips and place them on top of the tray of baked salmon with potatoes. We also sprinkle a little salt on top.
  3. Then we peel and cut the onion into julienne strips, we also place it on the tray and salt it. This vegetable combines very well with baked salmon and gives it a very good sweet touch.
  4. Next, we do the same with the last ingredient of the baked salmon with vegetables: the tomato. We wash it well and cut it into wedges that we spread over the tray.
  5. Then we peel the garlic and put it in the grinder along with a handful of parsley to taste. You can use dry or fresh parsley, as you see fit, but if it is fresh much better. Then we grind this and add a splash of white wine by eye and a good amount of olive oil. This will be the dressing for our baked salmon with potatoes and vegetables.
