Ingredients to make Baked Rice with Chickpeas:
- For 4 people:
- 350g of rice
- 150g chickpeas
- 2 medium potatoes
- 3 medium tomatoes
- 1 head of garlic
- olive oil
- saffron
- sweet paprika
- Salt
- Water
How to make Baked Rice with Chickpeas:
- Soak the chickpeas the day before.
- Cook them in water and salt and at the end of cooking color them with saffron.
- Then drain and reserve the cooking broth.
- Peel the potatoes and cut them into 1 cm slices.
- Thick approx. Halve the tomatoes and chop one of them.
- In a round and flat casserole, heat the oil and fry the whole head of garlic, the half tomatoes and the chopped tomato.
- Then add the potatoes and a tablespoon of paprika, stirring everything.
- Add the rice, sauté, and then the chickpeas.
- Finally, wet with the hot broth (double that of rice and a little more).
- Stew it all for 6 or 8 minutes.
- Then, put the casserole in the oven that will be preheated to 200º, until the rice is cooked, about 8 minutes.
- Finally, take it out of the oven and serve it in the casserole without letting it rest.
