Baked rice recipe step by step

Ingredients to make baked rice step by step:

  • 600 grams of Rice
  • 3 onion black pudding
  • 3 meat sausages
  • Diced pork rib
  • Diced pork belly
  • 1 whole head of garlic
  • 2 red tomatoes
  • 2 sliced ​​potatoes
  • 1 Tomato to grate
  • 1 can of cooked chickpeas
  • 1 pinch of ground saffron
  • 250 milliliters of water
  • 1 pinch of salt
  • 5 tablespoons of oil

How to make baked rice step by step:

  1. Heat the oven to maximum temperature.
  2. Separately, in a deep frying pan, heat the oil and place the whole head of garlic.
  3. Fry the ribs and the bacon, previously salted, cut into cubes until golden brown.
  4.  As they are made, put them in the clay pot that we will use to cook the rice in the oven.
  5. When the ribs and bacon are done, fry the potato slices in the same pan, not too much, and leave them on a plate as they are done.
  6. In that pan, turn the whole black pudding a few times and leave them on the plate with the potatoes.
  7.  Then, in the same oil, removing a little if there is too much, fry a grated tomato, add the rice, stir a few times and add the previously drained chickpeas.
  8. Give a few turns put all the preparation in the clay pot with the reserved ribs and bacon.
  9. Put salt and saffron, just a pinch.
  10. Pour the boiling water on top and place the rest of the ingredients, that is, the sliced ​​potato, the thickly sliced ​​tomato, the whole black pudding and, in the center, the whole head of garlic.
  11. Put the rice in the oven, giving heat below until you see that the rice has dried and is toasted on top.
  12. When it is ready, leave the Valencia rice with chickpeas to rest outside the oven, about 20 minutes, and eat.
  13. In Valencia it is typical to eat it directly from the pot and with a wooden spoon.
