Enchiladas are considered a traditional dish in both Guatemala and Mexico. In Mexico, specifically, it is a dish that is prepared with a corn tortilla base bathed in some spicy sauce, hence its name.
Depending on the style of preparation, Mexican enchiladas can be accompanied or filled with meats or cheese. This time we present you some baked red cheese enchiladas, which are low in fat, delicious and practical in their preparation.

Ingredients to make Baked Red Cheese Enchiladas:
- 16 pieces of corn tortilla
- 6 red tomato
- ¼ onion
- 3 jalapeno peppers
- 1 clove garlic
- 150 grams of Panela Cheese
- 1 teaspoon of oil
- 1 pinch of salt
- 1 pinch of pepper
How to make Baked Red Cheese Enchiladas:
We present below the ingredients to use in the preparation of our baked red cheese enchiladas. To start with the sauce, we put the red tomato, the chilies, the onion and the garlic in a container with water for cooking. Cook over medium heat until all vegetables are tender.
Since the ingredients of our sauce are perfectly cooked, we add them to the blender to form our sauce.
To finish cooking the sauce for the enchiladas, in a saucepan add the teaspoon of oil and let it heat up. Then we add our sauce and to season we add a little salt and pepper.
Now that we have our red sauce ready, in the same saucepan we are going to add the corn tortillas one by one to bathe them with this sauce.

Then we bathe the tortillas with the sauce and place them in the refractory or tray that you have special for the oven. Add a few pieces of panela cheese inside each tortilla, as seen in the photo and place one next to the other.
When you have all the enchiladas ready and stuffed with pieces of panela cheese, we cover them with more sauce and sprinkle more panela cheese, but now grated, on top.
Put the tray in the oven and cook the red enchiladas for 6 minutes at 200°C so that they are ready. Once out of the oven we can enjoy a delicious baked red cheese enchiladas. Good appetite!
