There is nothing like some good, rich and super easy baked potato pancakes to prepare as an appetizer, entree or side when you don’t have much time to cook but still want something tasty. Discover all the steps to make these baked potato toasts or tortillas thanks to the recipe and you will see how in less than half an hour you have them ready to eat.

Ingredients to make Baked Potato Cakes:

  • 4 medium potatoes with skin
  • Olive oil
  • Pepper
  • Sal
  • Lemon juice

How to make Baked Potato Cakes:

We wash the potatoes and put them in the pressure cooker until they are cooked, I left them on low heat for 10 minutes after raising the second ring. While the potatoes are cooking, prepare the olive oil with salt and lemon pepper (to taste).

Preheat the oven, prepare a tray with parchment paper and spread it with the oil using a silicone brush. Remove the cooked potatoes from the pot. They must be tender.

We flatten them with the skin making a kind of pancake. We put the potato cakes on top of the baking paper and put the seasoned oil on top. We put it in the oven and let it roast.

Once the baked potato cakes are ready, we can eat them alone or with a sauce.
