Baked octopus with potatoes

Ingredients to make Baked Octopus with Potatoes:

  • 1 kilogram of Baby Octopus
  • 2 tablespoons of olive oil
  • 1 teaspoon of fresh rosemary
  • 8 units of yellow potatoes
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 teaspoon of garlic paste

 How to make Baked Octopus with Potatoes:

  1. To start making the baked octopus recipe you must prepare the ingredients.
  2. Cut the yellow potatoes into medium squaresas shown in the photograph.
  3. Take them to a pot with water over medium heat and cook them for approximately 8 minutes.
  4. Remove the pot from the heat after this time.
  5. With this step we intend to precook the potatoes before putting them in the oven, hence it is not necessary to finish cooking them in water.
  6. Trick: Remember that you can use any other type of potato.
  7. It’s time to blanch the baby octopuses.
  8. To do this, put a pot with water over medium heat. When it is boiling, insert the tentacles of the baby octopus three times, following the same cooking process as a large octopus, with the difference that this type of smaller octopus only needs to be in boiling water for 30 seconds.
  9. Grease a baking dish with a little butter, add the potatoes to the bottom and the octopus cookedon top of them.
