Baked Noodle Croquettes Recipe

Ingredients to make Baked Noodle Croquettes:

  1. 250 grams of cooked noodles
  2. 1 cup of skimmed, non-dairy or non-dairy milk
  3. 2 tablespoons cornstarch (corn starch)
  4. 2 tablespoons melted cheddar cheese
  5. 1 egg
  6. ½ cup breadcrumbs
  7. ½ cup of cornmeal (60 grams)
  8. 1 branch of green onion

How to make Baked Noodle Croquettes:

  • Wondering what to do with leftover noodles? Let’s go there! To get started with this baked noodle croquettes recipe, you first need to cook an easy white sauce. To do this, dissolve the cornstarch in the cold milk and heat it in the microwave for 1 minute, mix and heat for 1 more minute. Repeat it as many times as necessary until it thickens. If you don’t have a microwave, you can make it in a pot on the stove over medium heat, stirring constantly until it thickens. The cooking time in this case will be approximately 3-5 minutes
  • Once the white sauce is cooked, mix it with the cheddar cheese.
  • Tip: if you do not want to use this cheese, you can use only the white sauce seasoned with nutmeg and pepper.
  • Integrate the mixture of white sauce and cheese with the noodles that you have left over. If you are making this recipe without leftover noodles, cook them in plenty of boiling water for approximately 8-12 minutes, the cooked noodles should be according to the instructions on the package. The raw amount will be half that indicated in the recipe, that is, 125 grams.
  • Also add the green part of the chopped green onion and try. Correct the flavor if necessary and chill the preparation in the freezer for approximately 10-15 minutes to make it easier to maneuver.
  • Meanwhile, prepare a roasting pan with 1 teaspoon oil or spray with cooking spray. On the other hand, beat the egg with 1 tablespoon of waterand mix. In another container add the grated bread with the cornmeal.
  • Tip: if you want to make this recipe suitable for celiac, choose gluten-free noodles and coat only with cornmeal. Keep in mind that all the ingredients that you are going to use, beyond the fact that they do not contain gluten, must have the corresponding logo
  • After 10-15 minutes, turn on the oven at maximum temperature to pre-heat. Remove the preparation from the freezer and moisten your hands. Take 1 tablespoon of the noodle mixture and shape as desired. With wet hands, the preparation will not stick.
  • Pass the noodle croquettes through the egg and then through the breadcrumbs. Place them on the roast that you have previously prepared with 1 finger distance between each one. In this way, the heat will arrive evenly. Next, cook them in the oven at 200ºC for approximately 10 minutes. After that time, turn them over and cook them for 5 more minutes so that they brown evenly.
  • Serve your hot baked noodle croquettes as a starter. You can add some sauce, such as melted cheddar cheese or tomato sauce to moisten them. If you wish, you can also serve them as a main dish accompanied by a hearty and fresh salad
