Baked Lobster Recipe

Ingredients to make Baked Lobster:

  • 1 unit of cooked red lobster
  • 100 grams of butter
  • 100 grams of peeled chestnuts
  • ½ cup of white wine
  • 15 grams of peeled almond
  • ½ cup Cream
  • 2 dessert spoons of flour
  • 15 grams of peeled pine nuts
  • 1 tablespoon lemon juice
  • 1 tablespoon of bouillon powder
  • 1 dessert spoon of sugar
  • 40 grams of Gruyere cheese
  • 1 dessert spoon of Worcestershire sauce
  • 1 pinch of white pepper

 How to make Baked Lobster:

  1. Cook the peeled chestnuts in a little water and let them cool well.
  2. Split the lobster lengthwise, being careful not to disintegrate the shell.
  3. Remove the meat, separating the white from the spongy parts, the yellowish or blackish parts that must be discarded, as well as the intestines that are in a venous form.
  4. Wash the inside of the shell very well, dry it and grease it with part of the butter.
  5. Cut the white meat into not very small squares and sauté them (fry them over high heat for a short time) in the rest of the butter, remove from the fat and sprinkle them with the lemon juice.
  6. Blend the wine, chestnuts, almonds and pine nuts.
  7. In the butter in which the lobster was sautéed, fry the flour without browning it, adding the wine with blended pine nuts, chestnuts and almonds and stir to form a paste, seasoning with the bouillon and pepper.
  8. Remove from heat and add cream, Worcestershire sauce and sugar.
  9. Add the lobster meat, being careful not to disintegrate it.
  10. Fill the two shell halves with this mixture.
  11. Cover with the grated cheese.
  12. Bake for fifteen minutes and spend a moment on the grill to gratin.
  13. (Suggested to serve with Romania salad, chopped pineapple, maraschino cherries, salt, pepper and oil.)
