Ingredients to make Baked Lobster:
- 1 unit of cooked red lobster
- 100 grams of butter
- 100 grams of peeled chestnuts
- ½ cup of white wine
- 15 grams of peeled almond
- ½ cup Cream
- 2 dessert spoons of flour
- 15 grams of peeled pine nuts
- 1 tablespoon lemon juice
- 1 tablespoon of bouillon powder
- 1 dessert spoon of sugar
- 40 grams of Gruyere cheese
- 1 dessert spoon of Worcestershire sauce
- 1 pinch of white pepper
How to make Baked Lobster:
- Cook the peeled chestnuts in a little water and let them cool well.
- Split the lobster lengthwise, being careful not to disintegrate the shell.
- Remove the meat, separating the white from the spongy parts, the yellowish or blackish parts that must be discarded, as well as the intestines that are in a venous form.
- Wash the inside of the shell very well, dry it and grease it with part of the butter.
- Cut the white meat into not very small squares and sauté them (fry them over high heat for a short time) in the rest of the butter, remove from the fat and sprinkle them with the lemon juice.
- Blend the wine, chestnuts, almonds and pine nuts.
- In the butter in which the lobster was sautéed, fry the flour without browning it, adding the wine with blended pine nuts, chestnuts and almonds and stir to form a paste, seasoning with the bouillon and pepper.
- Remove from heat and add cream, Worcestershire sauce and sugar.
- Add the lobster meat, being careful not to disintegrate it.
- Fill the two shell halves with this mixture.
- Cover with the grated cheese.
- Bake for fifteen minutes and spend a moment on the grill to gratin.
