Baked lobster paella recipe

Ingredients to make Baked Lobster Paella:

  • For 4 people:
  • Calories per person: 700-800.
  • two lobsters of 500-600 gr. each
  • 400 gr. of rice
  • 1 large onion
  • 2 bell peppers, one green and one red
  • 2 ripe tomatoes
  • 3 or 4 garlic cloves
  • 1 small glass of olive oil
  • Salt
  • Pepper
  • 5-6 sprigs of parsley
  • 250 gr. of peeled prawns
  • 150 gr. chopped squid
  • 150 gr. of clams
  • 850 ml. of fish fumet.

How to make Baked Lobster Paella:

  1. Arrange in a paellera over the heat and pour a glass of oil into it.
  2. Split the lobsters lengthwise and brown them well on both sides.
  3. When they are ready, remove them.
  4. In the same oil add the onion, the peppers and two cloves of garlic, all very minced.
  5. Once sautéed, add all the shellfish except for the lobster.
  6. Sauté for a few minutes.
  7. Once done, add the chopped tomatoes, discarding all the seeds that can be.
  8. Then pour the rice and a little saffron.
  9. It is sautéed again and then the fish fumet is poured.
  10. When it starts to boil, we will rectify the salt and add a mince made with garlic and parsley.
  11. We will keep it boiling for five minutes and decorate the paella with the lobster halves.
  12. Once decorated, place it in the oven for 10 minutes, making sure it doesn’t burn.
