Tocino de cielo is a traditional homemade dessert. In my house it was my grandmother who made it and how delicious it was. Over time it has been lost and we prepare it from time to time. The homemade bacon from heaven in the oven is a forceful dessert due to the amount of eggs and sugar it contains, but with only these two ingredients we are going to prepare, together with this article, this sweet of a lifetime that is worth making. I’m sure you’ll like it!
Ingredients to make homemade baked bacon:
- 3 units of whole eggs
- 8 units of egg yolks
- 450 grams of sugar (2¼ cups)
- 250 milliliters of water
- To prepare the caramel:
- 100 grams of sugar (½ cup)
- 2 tablespoons of water
How to make homemade Baked Sky Bacon:
- Prepare the ingredients: eggs, water and sugar.
- Prepare the syrupby putting the water and sugar in a saucepan over medium heat until all the sugar is dissolved.
- In another bowl we put the yolks and the eggs. We beat.
- On the other hand we prepare the caramel: we put the sugar and the tablespoons of water and let the caramel be made.
- When the syrup is ready, turn it off and let it cool for 5 minutes. When it has warmed up a bit, we will add it little by little and without stopping stirring the egg mixture.
- Once mixed we pass it through a strainer. We booked.
- In an oven tray we cover the bottomwith the liquid caramel.
- On top of the caramel we throw the eggs with the syrup.
- We cover the tray with the homemade sky bacon with aluminum foil, sealing the edges well so that no water enters, we put the tray on top of another larger dish or the oven plate, and we put a little hot water on the bottom of the plate.
- That the water is at a height a little less than half of the egg tray. This will be the bain-marie.
- We put the homemade sky bacon in the oven and put it in the middle with fire up and down at 170 ºC for about 40 minutes.
- Tip: The cooking time for the bacon in the oven will vary depending on your appliance, but it is more or less about 40-45 minutes.
- After this time, we will click in the center and if it comes out dry it will be ready. We take the bacon out of the ovenand let it cool. We’ll put it in the fridge. And ready until serving time!
