Baked grouper gratin recipe

Follow this recipe step by step and discover how to prepare grouper in a different and delicious way. The grouper gratin in the oven is made with a special béchamel sauce that gives the dish an intense flavor with which you will surprise everyone.

Ingredients to make Baked Grouper Gratin:

  • 6 slices of Groupers
  • 1 glass of white wine
  • 3 glasses of milk
  • 75 grams of Butter (⅓ cup)
  • 2 tablespoons of flour
  • 150 grams of grated cheese
  • 3 units of onion
  • 1 bunch of aromatic herbs
  • 1 pinch of dried rosemary and thyme
  • 1 pinch of peppercorns
  • 1 pinch of Salt and Pepper
  • 1 pinch of Nutmeg

How to make Baked Grouper Gratin:

  1. The first step to prepare this baked grouper recipe will be to season the fish. To do this, place the grouper slices on a baking tray and add salt on both sides.
  2. Apart, cut the onion into slices and lightly fry. Then, cover the fish with the onion and bathe the tray with the white wine. Sprinkle with the herbs and peppercorns.
  3. Add a little water to the tray, enough to lightly cover the fish and cook covered with the oven at 180º C. for about 15 minutes. Then, separate the grouper and the onion and reserve apart from the brother.
  4. Pass the broth through a strainer and bring it to a boil until it reduces a little. Separately, prepare a béchamel sauce with half the butter, milk and flour, remember to season it with salt, pepper and nutmeg.
  5. Mix the broth reduction with the béchamel, 50 grams of grated cheese and a tablespoon of butter. Mix the ingredients well until they are fully integrated. You should get a homogeneous and slightly thick sauce.
  6. Next, pour some of the sauce onto the baking sheet and place the grouper pieces along with the onions. Cover with the rest of the béchamel sauce, cheese and butter.
  7. Finally, grill the grouper in the oven at high temperature for a few minutes, until the cheese melts and browns.
