Fried milk is a traditional Easter sweet, but it is appetizing at any season of the year, so it is not necessary to wait until its dates to prepare and enjoy it. As it is usually a high-calorie dessert, in this article we have prepared a recipe for baked fried milk. It sounds like a contradiction, but the idea is to get a recipe as similar to the original dessert with a healthier preparation and also suitable for diabetics.

In this version, we make the fried milk without frying and replace the sugar with granulated stevia. In addition, we also use skimmed milk. You will see that it will not have anything to envy to the original fried milk, because it will be very creamy and with a lot of flavor. Find out how to make light and healthy baked fried milk!

Ingredients to make Baked Fried Milk:

  • 500 milliliters of skimmed milk
  • 25 grams of cornmeal or cornstarch
  • 1 cinnamon stick
  • 1 grated lemon peel
  • 2 tablespoons granulated or liquid stevia
  • 1 egg to coat
  • 1 small glass of corn flour or whole spelled for coating
  • 2 tablespoons ground cinnamon to sprinkle if you like
  • 1 tablespoon vanilla essence

How to make Baked Fried Milk:

  1. Set aside a glass of milk from the half liter that you are going to use. Bring the rest to cook with a cinnamon stickand, if you want to give it a little extra flavor, you can also add some ground cinnamon.
  2. Pour in a splash of vanilla and stevia, dissolve the ingredients well and add lemon zest. This will help make this light fried milk taste the same as the original.
  3. Let it come to a boil, remove from the heat and cover the casserole so that the flavors emulsify. Meanwhile, mix the cornstarch flour with the cold milk until dissolved.
  4. Remove the cinnamon stick from the milk emulsion and pour the milk mixture with the flour, stir until dissolved and bring back to a simmer.
  5. Stir until you notice that it thickens and turns into a fine and creamy cream.
  6. Keep stirring on the fire for 2 minutes, in this way you will get a super creamy fried milk left in the oven and without lumps. You will notice that the milk acquires a darker color, it is due to the cinnamon powder.
  7. Prepare a buttered mold and pour the fried milk mixture. Put a sheet of plastic wrap on top of the cream to prevent it from hardening and forming a crust.
  8.  Put the container in the fridge once it has cooled and leave it for 3 to 4 hours in the fridge.
  9.  If you leave it overnight, the fried milk mixture will curdle better, it will become more solid and it will be easier to work with.
  10. Get out of the fridge and pour the milk made into a plate, on a plate or tray.
  11. Cut squares or rectangles, beat an egg and prepare the cornmeal or whole spelt in a container.
  12. Pass the squares of milk through the flour and then through the egg.
  13. Trick: preheat the oven to 200 ºC only with the resistance on top of the oven or grill.
  14. Deposit the squares of milk on a baking sheet lined with parchment paper, place in the middle of the oven.
  15. Only the top layer should brown, so let it cook for 15 minutes.
  16. Once golden, take out the squares of fried milk baked without sugar. You can sprinkle with sweetener or cinnamon if you want, but they will be perfect without adding more.
