Baked cod with tomato recipe

Ingredients to make Baked Cod with Tomato:

  • 700 grams of fresh cod
  • 3 medium potatoes
  • ½ kilogram of red tomato
  • 1 onion
  • 1 pinch of garlic salt
  • 1 pinch of salt
  • 1 pinch of oregano
  • ½ cup of wheat flour (70 grams)
  • 2 tablespoons of oil

How to make Baked Cod with Tomato:

  1. Gather the ingredients that we will need for our preparation of baked cod with tomato.
  2. To begin, we take the cod and place it in a deep bowl, covering it with water, this in order to desalt it. We are going to keep it like this for approximately 20 hours, trying to change the water every three hours, since due to its conservation methods it is a very salty marine species.
  3. Once the cod is salted, we begin with the preparation of our dish. To do this, we cut the potatoes into slices approximately 1 or 2 cm wide, and place them in a saucepan with boiling water to cook for approximately 10 minutes. After this time we remove them from the water and reserve them for a moment.
  4. On the other hand, we coat the cod with wheat flour so that the fish fillets are completely covered.
  5. Once the fish is ready, cook the cod for 2 minutes in a pan with hot oil, constantly changing sides. When the fillets are ready, remove them from the pan and reserve them for a moment.
  6. Trick: We must be careful not to exceed 2 minutes; otherwise the baked cod with tomato could be very dry afterwards.
  7. On the other hand, we are going to chop the onion and the red tomato to continue with the baked cod recipe. Then, we fry the onion in a pan with hot oil and, when it becomes transparent, we add a pinch of ground garlic.
  8. Once the onion is ready, add the chopped red tomato and in the same way let it cook perfectly adding a pinch of salt. When it is ready, we remove the sauce from the heat and reserve a moment.
  9. We take a little of the tomato and onion sauce, cover the base of the refractory that we will put in the oven, place the pieces of cod and on them the potato slices.
  10. On top of the potato slices we are going to add the remaining sauce and we put the cod in the oven with potatoes and tomato for 20 minutes at 190 °C.
