- 2 units of eggs
- 2 garlic cloves
- 1 handful of parsley
- 1 pinch of salt
- 1 glass of light olive oil
- 4 tablespoons flour
How to make Battered Cod with Garlic and Parsley:
- We prepare the ingredients. We will preferably buy the salted cod, but if we buy it salted, we will keep it in water for 48 hours, changing the water every 6-8 hours.
- In a plate, beat the two eggs, add the chopped parsley, and grate the two garlics and mix.
- Add the flour little by little, stirring. It should look like a light cream.
- Tip: If the dough remains to coat cod with lumps of flour, let it rest in the fridge for 10 minutes, remove it, and mix well.
- Coat the cod pieces in this dough. You can put a little salt in the dough since sometimes it is a bit soft.
- We will put a frying pan with plenty of oil and when it is hot we will fry the pieces of fresh cod in batter.
- We put a plate with kitchen paper and we will be putting the pieces of fresh cod in crispy batter so that it absorbs all the oil.
- And the cod battered with garlic and parsley will be ready.
