Baked Chicken Entomatadas Recipea

It’s almost time for lunch and you have no idea what you could prepare? Well, how about preparing some practical and succulent baked chicken entomatadas?

This time we have decided to bring you a delicious recipe for entomatadas that we will fill with a delicious shredded chicken and bathe them with a rich red tomato sauce, which will give them that moisture and texture that will make the moment they enter your mouth the combined flavors melt together, resulting in a piece of heaven for your palate.

Ingredients to make Baked Chicken Entomatadas:

  • 1 chicken breast
  • 6 pieces of red tomato
  • ¼ piece of white onion
  • 1 piece of red Serrano chili
  • 1 clove garlic
  • 1 cup of grated cheese
  • 1 pinch of salt
  • 1 pinch of pepper
  • 3 tablespoons of oil
  • 16 pieces of corn tortilla

How to make Baked Chicken Entomatadas:

The first thing is to gather all the ingredients that we will need to prepare these delicious baked chicken entomatadas. We are going to start our preparation by cooking the tomatoes for our sauce: for this we are going to place the red tomatoes in a saucepan with enough boiling water together with the Serrano pepper, the garlic and the onion, and let them cook for 10 minutes over a high heat tall. On the other hand, in another saucepan with enough boiling water, add the clean chicken breast along with a piece of onion and a pinch of salt and let it cook over high heat for 25 minutes. Once the chicken is ready, we remove it from the broth to cool down, and once it is cold, we shred it completely and reserve it for a moment.

Once the red tomatoes are ready, we place them in the blender together with the chili, garlic and onion and proceed to blend until we obtain a homogeneous sauce for the chicken entomatadas. When we have formed the sauce, we take it to fry in a saucepan with previously heated oil, add a pinch of salt, pepper and let it season for 5 minutes.

Meanwhile we take the corn tortillas and with the chicken already cooked and shredded we fill them forming a kind of soft taquitos, as we can see in the following image.

Now we place them on the baking tray and bathe them with the red tomato sauce that we prepared a moment ago. Once the chicken entomatadas are covered with sauce and in the tray, we take them to bake for 10 min at 180° C, adding enough sauce to prevent them from drying out.

After this time we remove them from the oven and serve them hot accompanied by a little grated cheese, sour cream and lettuce. AND READY! That you enjoy these delicious baked chicken entomatadas.
