Baked Chicken and Cheese Quesadillas Recipe

Quesadillas are a typical dish of Mexican cuisine of humble origins but absolutely delicious.  At home I prepare our own version of the baked chicken and cheese quesadillas that this time I share.

It is a simple and quick recipe for chicken and cheese quesadillas to prepare that is very tasty and is ideal for an informal meal or a snack dinner. Prepare it, serve it cut into small pieces and have a good time with family or friends!

Ingredients to make Baked Chicken and Cheese Quesadillas:

  • 2 large corn tortillas
  • 250 grams of sliced ​​chicken breast (I use a package that has 12 slices)
  • 6 slices of cheese
  • 1 splash of spicy sauce with curry and tomato
  • 1 handful of grated cheese
  • 1 handful of fried onion

How to make Baked Chicken and Cheese Quesadillas:

To prepare these baked chicken and cheese quesadillas, we put one of the corn tortillas on the oven tray (I recommend covering the tray with aluminum foil or a silicone baking sheet) and put a splash of sauce. This time I have used a curry and tomato sauce with a little bit of spice, but you can put the one you like the most or not put any.

Arrange six slices of chicken breast in a fan, covering the corn tortilla in a circle. There will probably be a hole in the center of the Mexican quesadilla that is not covered by the chicken slices, but that’s okay.

Trick: We can change the slices of chicken breast for turkey breast or York ham.

Next, we put the slices of cheese on top of the chicken. We can use any cheese but if you can I advise you to buy cheese that comes in slices (cured or semi) which is very convenient for this recipe and gives it flavor. We cover the cheese quesadilla with the six slices of chicken that we have left.

Put a little more sauce on top and sprinkle with a handful of grated cheese and a handful of fried onion.

Cover the chicken and cheese quesadilla with the other tortilla and place in a preheated oven at 180ºC for about 15 minutes, until the cheese is melted. We control that the tortilla on the surface does not brown excessively.

We take out the baked chicken and cheese quesadillas, cut them into portions (makes eight servings) and serve! Be careful with the cheese that is much melted at first and can burn us!
