Baked Bacon Macaroni and Cheese Recipe

They may seem like just another macaroni and cheese au gratin, but I assure you that this recipe that I share with Recetas Gratis is not one more, it is the recipe for the most delicious baked macaroni and cheese and bacon I have ever tasted!

Sure it’s a calorie bomb, but a day is a day and these bacon macaroni and cheese will turn even the worst of Mondays into a party.

If you feel like giving it a rogue touch, you can add spicy gorgonzola; you’re going to love it!

Baked Bacon Macaroni and Cheese Ingredients:

  1. 250 grams of Macaroni
  2. 150 grams of smoked bacon
  3. 1 medium onion
  4. 200 grams of Gorgonzola cheese
  5. 2 tablespoons of extra virgin olive oil
  6. 1 teaspoon of Dijon mustard
  7. 100 grams of grated cheese (to your liking)
  8. 1 teaspoon of Thyme

For the béchamel:

  1. 200 milliliters of milk
  2. 40 grams of flour
  3. 40 grams of Butter
  4. 1 pinch of Nutmeg

How to make Baked Bacon Macaroni and Cheese:

  • First of all, to prepare these baked macaroni and cheese and bacon we put a casserole on the fire with water and when it starts to boil we add the macaroni. We remove from time to time to prevent them from sticking and once they are cooked (without going too far) we remove and drain.
  • Meanwhile, we peel and cut our onion very finely. In a wide pan we put a couple of tablespoons of olive oil and poach the onion. We also cut the bacon into little cubes and when the onion is poached we add it.
  • We heat the milk for the béchamel sauce for the macaroni with cheese and bacon. In another casserole we put the butter and when it is melted we add the flour that we sauté to remove the taste of raw flour.
  • Add the hot milk to the butter and flour while stirring with a whisk to prevent lumps from forming. We keep over medium heat, stirring frequently until we see that the béchamel sauce begins to thicken.
  • Cut the gorgonzola cheese into small pieces and add it to the béchamel casserole. We also add the teaspoon of mustard, thyme and nutmeg and stir to obtain a homogeneous cream without lumps. We rectify salt if necessary.
  • In the pan where we had the poached onion and bacon, add the macaroni and mix well. Finally, we add the cream that we have prepared to the macaroni with bacon and cheese and mix again.
  • We transfer them to a suitable baking dish and sprinkle with grated cheese to our liking. Then we put the macaroni with bacon and béchamel in the preheated oven and leave them for a few minutes for the cheese to melt.
  • Once gratin, we take them out, serve them and enjoy the baked macaroni and cheese and bacon!
