  • 3 potatoes
  • 2 garlic cloves
  • 2 chilies
  • 1 tablespoon paprika
  • 100 milliliters of white wine
  • 1 pinch of salt
  • 1 small glass of olive oil

How to make Sea Bass on the back:

  1. We will start by preparing the potatoes for the sea bass back in the oven. Peel them and cut them into thin slices. Before I put them in the oven, I put them in the microwave for a few minutes. Then I put them covering the base of a baking tray.
  2. Trick: If you prefer you can make the sea bass without potatoes.
  3. We put the sea bass that we will already have opened; this is not prepared at the fish market. We put it on top of the potatoes, add a little salt, and add the glass of wine and a splash of oil. We put the sea bass on its back in the oven at 180-200 ºC and leave it until the fish is ready, about 20-30 minutes. It will depend on how big the piece is.
  4. When the fish is ready, remove the tray from the oven. Prepare a frying pan in which we will heat a small glass of oil with the sliced ​​garlic and a couple of chilies.
  5. When the garlic is golden, add the paprika, stir and immediately remove it from the heat so that it does not burn.
  6. Add the matador on the sea bass to the back with paprika.
