Avocado Salad with Cucumber and Tomato Recipe

Ingredients to make Avocado Salad with Cucumber and Tomato:

  • 1 piece of escarole lettuce
  • 2 leaves of chard

How to make Cucumber Tomato Avocado Salad:

To prepare this fresh salad, you have to gather all the ingredients. We wash our hands well. Then, we proceed to wash and disinfect the vegetables, let them drain and dry. Peel the cucumber, remove the seeds with a spoon and cut into thin slices.

Trick: To dry the leaves of lettuce and chard we use a centrifuge or paper towels.

The cherry and puritan tomatoes are cut in half, as shown in the photograph. The peanuts are roasted in a pan, over low heat and without stopping moving. When they are bright, turn off the heat and let cool to continue with the preparation of the avocado salad. To make the citrus dressing, squeeze the juice from 2 oranges and half a lemon. In a jar we place the citrus juices.

Then add half a teaspoon of garlic powder, 1 teaspoon of salt, a pinch of pepper, and a tablespoon of balsamic vinegar. Shake and reserve the healthy salad dressing for later.
