Ingredients to make Avocado Mousse:

For 4 servings

  • 2 avocados
  • 1 teaspoon chopped onion
  • 1 tablespoon chopped coriander
  • 1/2 teaspoon Tabasco sauce
  • 1/2 teaspoon granulated chicken stock
  • 1/4 teaspoon salt
  • 1/4 cup of water
  • 1 teaspoon gelatin
  • 2 cups of cream
  • The juice of 1 lemon

For the cascabel chili oil

  • 24 mussels
  • 1/2 cup olive oil
  • 2 bell peppers

How to make Avocado Mousse:

Dissolve the gelatin in the water and refrigerate. Beat the cream until fluffy. Blend the avocado together with the onion, cilantro, lemon juice, Tabasco sauce, chicken broth and salt. Now dissolve the already hydrated gelatin in a bain-marie.

Mix the avocado preparation with the whipped cream and the gelatin in an enveloping way, helping you with a spatula.

To prepare the cascabel chili oil, cut the chilies into rings and fry them in the olive oil and then blend them. Open fresh mussels in boiling salted water; Leave in the water for a minute and remove.

To serve, assemble the mousse on a plate, decorate with the mussels and bathe with the cascabel chili oil. You can also decorate with shrimp.
