Avocado and Pomegranate Salad Recipe

Ingredients to make Avocado and Pomegranate Salad:

Dressing

  • 1 small glass of natural soy yogurt
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 pinch of salt and pepper
  • 1 teaspoon of mustard powder
  • ½ teaspoon dried dill
  • ½ unit of Cucumber
  • Salad
  • 1 unit of Avocado
  • 4 slices of tomato
  • 3 handfuls of pomegranate seeds

How to make Avocado Pomegranate Salad:

To prepare this fresh and filling salad, we will start by making the dressing. To do this, mix all the ingredients well except the cucumber.

Peel the cucumber, remove the part of the seeds and cut into small squares. Then mix with the yogurt sauce and reserve in the fridge.

Tip: If you are not going to consume the salad right away, it is preferable to wait to put the cucumber in the sauce just before serving. If so, you can soak the cut cucumber in salted water.

To assemble the salad, cut the avocado in half and make the typical fan-shaped cut, making cuts lengthwise and then peeling off the skin.

Place 2 tomato slices on each plate and the avocado on top. Then bathe with the yogurt sauce and finish the salad with a handful of pomegranate seeds. This delicious avocado and pomegranate salad can be served as a starter in a special meal.
