Ingredients to make Autumn Skewers:

  • 4 skewers
  • 4 mushrooms
  • 2 green peppers
  • 2 garlic
  • 4 spring onions
  • 2 carrots
  • 2 eggplants
  • 4 tomatoes
  • Olive oil
  • Salt

How to make Autumn Skewer:

Prepare the vegetables by cleaning and chopping the green peppers and spring onions. You have to wash, scrape the skin and cook the carrots for ten minutes, then cut them into pieces. Clean and cut the mushrooms in half. Wash and cut the aubergines into pieces (without removing the skin). Wash the tomatoes.

Thread the vegetables onto the skewers, alternating mushroom, green pepper, spring onion, carrot and aubergine, ending with a tomato. Season.

We spread a griddle with olive oil, heat it and put the skewers over medium heat so that they cook little by little, leaving them for 3 minutes on each side, until the skewers are well browned on both sides.

While the skewers are just being made, prepare a refried garlic and green pepper, finely chopped. Remove when the garlic is golden and dress when serving the skewers. They can also be served with a vinaigrette.
