Ingredients to make Austrian Potage:
- 1/2 kilo of white beans (from the farm or Granville)
- 1 kilo of kale
- 4 medium potatoes
- 2 Austrian sausages
- 2 Austrian blood sausages, if possible from Tine
- 250 pig ear, tail or mask
- salt to taste
How to make Austrian Potage:
- Soak the beans overnight.
- Heat a high pot with 2/4 parts of the water and add the chorizos and black pudding (pierced with a fork), the beans and the pig’s ear or mask.
- When it starts to boil, cover the pot, lower the heat and let it cook for 1 hour and 1/2.
- After this time, add the chopped cabbage and the potatoes, cut into large cubes.
- Add salt to taste and keep the pot covered and over low heat for about 3/4 of an hour more, until everything is tender.
- Then remove from heat and let stand for about 20 minutes.
- Before serving, chop the black pudding, the chorizo and the ear or mask into regular pieces.
