Austrian stew recipe

Ingredients to make Austrian Potage:

  • 1/2 kilo of white beans (from the farm or Granville)
  • 1 kilo of kale
  • 4 medium potatoes
  • 2 Austrian sausages
  • 2 Austrian blood sausages, if possible from Tine
  • 250 pig ear, tail or mask
  • salt to taste

How to make Austrian Potage:

  1. Soak the beans overnight.
  2. Heat a high pot with 2/4 parts of the water and add the chorizos and black pudding (pierced with a fork), the beans and the pig’s ear or mask.
  3. When it starts to boil, cover the pot, lower the heat and let it cook for 1 hour and 1/2.
  4. After this time, add the chopped cabbage and the potatoes, cut into large cubes.
  5. Add salt to taste and keep the pot covered and over low heat for about 3/4 of an hour more, until everything is tender.
  6. Then remove from heat and let stand for about 20 minutes.
  7. Before serving, chop the black pudding, the chorizo ​​​​and the ear or mask into regular pieces.
