How to make Atole with piloncillo:
- The first step to make the piloncillo atole is to prepare the ingredients of the recipe.
- In a deep pot add the water, the evaporated milk and the piloncillo or panela.
- Bring to medium heat so that the piloncillo dissolves, add the cinnamon powder.
- Hydrate the tortilla dough with a little water until it dissolves well.
- When the piloncillo or panela has completely dissolved, add the tortilla dough and cook over low heat until our drink takes consistency. Once you see that the piloncillo atole has thickened, turn off the heat.
- Serve the drink by sprinkling a pinch of cinnamon over each of the glasses. The ideal is to consume the piloncillo atole hot or cold days, and accompanied by gorditas de nata or vanilla cookies.
