Asparagus soup with prawns’ recipe

Ingredients to make asparagus soup with prawns:

  • 500 g of wild asparagus
  • 200 g of prawns
  • 2 onions
  • 2 carrots
  • One and a half liters of vegetable broth
  • Half a glass of cream
  • 1 clove garlic
  • Oil
  • Salt
  • Parsley

How to make Asparagus Soup with Prawns:

1.Chop the onions and carrots and brown them over low heat.

2.Salt.

3.Chop the asparagus and, except for the tips, add them to the above.

4.Brown for 10 minutes.

5.Next, add the broth and salt and cook for another 10 minutes.

6.Pass the soup through the blender and then through the Chino.

7.Pour some cream.

8.Chop the garlic clove and brown it in a pan.

9.Peel and salt the prawns.

10.Sauté for a couple of minutes the tips of the asparagus together with the prawns in the oil where we have the garlic.

11.Add it to the soup.

12.Arrange the soup in the tureen and garnish with parsley.
