Ingredients to make Artichokes with foie:

  •  5 large artichokes and if they are not, use more artichokes
  •  2 dessert spoons of raw or toasted pine nuts
  •  1 leaf cutting
  •  1 piece of pippin apple
  •  1 fresh spring onion
  •  1 small glass of water
  •  1 small glass of sweet white wine

How to make Artichokes with foie:

To make these artichokes with foie gras and pine nuts, peel the artichokes cutting off both ends, leaving only the heart of the artichoke. Then, remove the leaves a little until the leaves lighten and look tenderer. Heat a saucepan with a liter of salted water and a squeeze of lemon.

Rub the artichokes with half a lemon so they don’t darken and, when the water in the pan starts to boil, add the artichokes. Cover and boil for 15 minutes. If it is necessary to cook longer depending on the quantity, add 4 more minutes, but it is not necessary to cook the artichokes too much or they will soften and lose their tasty texture.

Tip: when they are cooked, take them out and let them drain upside down to remove the cooking water.

Heat a pan and a few drops of oil to lightly toast the pine nuts, if you stir the pan to brown the pine nuts they will be browned at the same time. Don’t keep them too long, just a few seconds and remove and reserve.

Peel an apple, remove the skin and core, and cut into small cubes. Chop the white part of a spring onion. Pour a splash of olive oil in a frying pan, heat, and add the apple and spring onion. Sauté for approximately 3 minutes.

Add the wine, stir for a few seconds and pour the glass of water. Give a point of salt and ground white pepper. Let it cook slowly for 4 more minutes. Go on to crush the apple and the rest of the ingredients until they become a thick cream.

Trick: preheat the oven to 200 ºC up and down.

Choose an oven-safe dish and pour the applesauce into it. Spread the artichoke hearts on top and add a piece of foie to them. Let bake at 200 ° C with heat up and down for 5 minutes.

You already have your artichokes with foie and apple ready. Distribute the pine nuts on top and serve at the table with a glass of cava or a sparkling rosé wine, if the occasion calls for it. Either way, these baked artichokes are perfect for a successful gourmet meal.
