Ingredients to make artichokes in almond sauce:
- 1 kilogram of artichokes
- 1 small onion
- 2 tablespoons of crushed tomato
- 1 dessert spoon of sweet paprika
- 100 milliliters of white wine
- 1 clove garlic
- 1 lemon
- 1 handful of parsley
- 2 pieces of bread from the day before
- 1 handful of raw almonds
How to make Artichokes in almond sauce:
- Clean the artichokes well, removing the toughest leaves until you reach the center, which is the whitest part. Cut the artichokes and lemon in half. Then, pass the lemon pulp through the artichokes so that they take on flavor and do not oxidize. Then, put a bunch of parsley, a few pieces of lemon and the artichokes that you are cleaning in a bowl with water, so they will not spoil.
- Cook the artichokes in a pot with water and a little parsley for approximately 20 minutes, or until they are tender when pricked. When they are done, take them out and reserve the cooking water.
- Prepare the picada that will bring all the flavor to this recipe for artichokes in almond sauce. To do this, in a pan with a little oil over medium-low heat, fry the pieces of bread until golden brown and crispy. Also fry the raw and peeled almonds until golden brown, but without burning.
