Artichoke toast recipe

Ingredients to make artichoke toast:

  • 8 units of fresh artichokes
  • 1 bunch of parsley
  • 100 grams of Burgos cheese
  • ½ dozen green beans
  • 1 unit of Carrot
  • 1 unit of green apple
  • 3 tablespoons of olive oil
  • 1 tablespoon apple cider vinegar
  • 1 pinch of salt
  • 4 units of toasted roll

How to make artichoke toast:

Clean the artichokes and spread them with lemon. Cook them for 30-40 minutes in a saucepan together with a sprig of parsley.

Once cooked, we peel them until we reach their most tender part (the heart) and empty them. Cut the green apple into small cubes, cut the cooked green beans into strips and cut the carrot into brunoises (cut into very small squares).

We mix these vegetables and the apple with the olive oil and the apple vinegar and salt, being a slightly seasoned garnish so that it does not drip on the starter. Place a couple of artichoke hearts on the toasted bread. Cut the fresh cheese into slices and place on the artichokes.

Dress lightly with the garnished vinaigrette and place a slice of fuet as a decoration on top of the entire starter.
