Ingredients to make AROMATIC RICE AND SQUID SOUP:
- 500g squid
- 250 g round grain rice
- 1 leek
- 1 spring onion
- 2 tomatoes
- half green bell pepper
- 1 carrot
- 75ml oil
- pinch of ginger
- cardamom
- fresh coriander
- sea salt
How to make AROMATIC RICE AND SQUID SOUP:
1.Peel and chop the onion and leek.
2.Put in a large saucepan with the oil to fry.
3.Peel the tomatoes and cut into small pieces on the pan.
4.Stir with a wooden spoon and add the pepper, cleaned and cut into small cubes.
5.Peel the carrot and add to the sauce.
6.Lightly salt and season with fresh, chopped coriander.
7.Step 2 while the vegetables are poaching, clean the squid, removing the skins and guts; cut the body and tentacles into thin strips with kitchen scissors.
8.Add to the sauce and move with a wooden spoon so that it cooks well, letting the squid release the water.
9.Step 3 Add the rice to the pot.
10.Season with the spices and rectify the point of salt.
11.Move with the spoon to mix the ingredients well and cover the pan with a liter and a half of water, leaving it to cook covered for at least an hour over high heat (if necessary, skim during cooking).
12.Let stand half an hour to settle the flavors.
