How to make Arepa sifrina:

Begin the preparation of these delicious arepas sifrinas by cooking the chicken. To do this, cut the onion and carrots into feathers and sticks, respectively. You can make large cuts, since the cooking will be long and they will cook all the way through. Make a mattress with the vegetables and the wine on a baking sheet. On them, place the chicken pieces and cover them with the oregano and the lemon cut into slices.

Cook this preparation in the oven at 200 ºC for approximately 1 hour or until all the meat is completely cooked.

Tip: check the doneness of the chicken near the bones, since it is a place where the heat usually has a hard time reaching. You will notice that it is sufficiently cooked if the meat is white and the juices that come out are transparent.

When you have the chicken well cooked, proceed to shred it with the help of a knife and fork, discarding the cartilage and the remains of skin so as not to find them in your filling. Then let it cool.

Tip: reserve the vegetables with which you have cooked the chicken, they will be an exquisite garnish for any dish. They will last about 3 days refrigerated in the refrigerator and 3 months in the freezer. Don’t forget to label it!

Mix the shredded chicken with the mayonnaise and the diced avocado. If you want, you can season it with salt and pepper.

Tip: avoid salt if you have high blood pressure or indication to limit it in your diet. This stuffing is tasty enough that you won’t need it either.

Heat your arepas and cut them in the middle, without reaching the end. It should be like a book. Fill them with this preparation of shredded chicken, mayonnaise and avocado. Distribute the grated yellow cheese on each one and enjoy these delicious arepas sifrinas.
