Ingredients to make apple tarte tatin:

  • 6 apples
  • 60 grams of butter
  • 150 grams of brown sugar
  • 1 sheet of puff pastry

How to make apple tarte tatin:

  1. Prepare the caramel before starting to make the cake.
  2. To do it, use a dish or casserole that you can later put in the oven and that is a bit high.
  3. Introduce the sugar and butter into it and heat over very low heat so that, little by little, they dissolve. Stir with a wooden spoon to speed up the process.
  4. While the caramel is being made, peel the apples, remove the core and cut them into quarters.
  5. Remember that to make the apple tarte tatin the most recommended variety is the golden one.
  6. You’ll know the caramel is ready when it’s a toasty brown color, but not too dark.
  7.  At this point, place the apples on top of the caramel with the rounded part facing down, putting them as close together as possible and leaving no gaps between them.
  8. If there is a gap, cut smaller apple pieces to cover it.
  9. Let the apples cook in the caramel for 15 minutes over medium heat. While they are cooking, preheat the oven to 180ºC heat up and down.
  10. After the time, remove the casserole from the fire.
  11. Take the puff pastry base, stretch it out, give it a round shape and prick the entire dough with a fork. Place it on top of the apples tucking the edges in. If there is excess dough, cut it out to fit the mold.
  12. You can prepare your own puff pastry following this simple recipe: “Easy puff pastry “.
  13. Bake the apple tarte tatin for 20-30 minutes; the final time will vary according to each oven. It is best to watch the puff pastry and when it is golden, remove the cake.
  14. Remove the tart from the oven and let it cool down a bit before unmolding it.
  15. Serve the cake with a little whipped cream, cinnamon or a scoop of vanilla ice cream.
  16. Remember that this is the recipe for the authentic apple tarte tatin, but you can also make it with short crust pastry if you prefer.
