Nowadays, the variety of salads is, fortunately, immense and the recipes do not always have to be exclusively with lettuce or vegetables. In this case, we propose this recipe for potato salad with apple, a very rich, fresh and different dish that you will surely like at home. In addition, by using a fresh onion, the salad is light and digestible. This time, we have accompanied it with Greek yogurt, thus achieving a creamy harmonization of all its flavors.
This cold potato salad does not have many secrets; it is suitable for beginners in the kitchen and a great ally for light and quick lunches or dinners. It can be combined with the main dish or consumed alone. Be that as it may, it combines very well with almost any ingredient. We tell you how to make potato and apple salad with excellent results!
Ingredients to make Apple Potato Salad:
- 4 medium potatoes
- 2 apples
- 2 fresh chives
- 2 sweetened Greek yogurts (250 ml)
- 4 stalks of fresh chives
- 1 pinch of salt
How to make Apple Potato Salad:
First of all, we are going to peel and wash the potatoes. We put them in a pot with water and cook them until they are tender, but they do not fall apart. Depending on the size of the potatoes, they will be ready in 30-45 minutes.
Trick: We can use medium potatoes, and if we put them large, with fewer potatoes we will have enough. If the potato is large, it is better to cut it in half to cook it.
Drain the potatoes and let cool. Once they can be handled, we cut them into not very large squares and add a little salt. Peel the apples, core them and cut them in the same way as the potatoes, making the squares more or less the same size. We also cut the spring onions, but this time, in smaller cubes.

Mix the potato cubes, the apple cubes and the fresh onion in a bowl. Add the sweetened Greek yogurts on top and mix carefully. If you don’t like chives, add them only as a decoration, and if you like its flavor, add it at the same time as the yogurt.
Tip: If you don’t like chives, you can use fresh parsley, coriander, among other herbs. Of course, always in moderation or they will take away all the flavor of the potato and apple salad.
