Ingredients to make Apple Pie with pastry cream and biscuit base:

  • For the cover:
  • 3 pieces of apple
  • 80 grams of sugar
  • 2 pieces of lemon
  • For the pastry cream:
  • 3 pieces of egg yolk
  • 1 piece of cinnamon
  • 1½ tablespoons vanilla essence
  • 40 grams of cornstarch
  • 80 grams of sugar
  • For the cookie base:
  • 60 grams of butter
  • 1 package of cookies
  1. Gather the ingredients that we will needto prepare this apple pie with ground cookies.
  2. Remember that you can use any type of sweet biscuits such as Maria, Ducales, Vanillas or Digestive biscuits.
  3. Let’s start with the preparation of the cookie basefor the apple pie.
  4. We then take all the cookies and crush them in the blender until they are powdered. It is important that you check that the blender glass is completely dry.
  5. Now we add the butterand mix with the cookie powder. Mix these two ingredients well until you get a pasty and malleable mixture.
  6. Tip: This process will be much easier if you add the slightly melted butter.
  7. We take this paste and cover the base of the moldwhere we will make our apple pie with Maria cookies.
  8. The idea is to completely cover the base and the edges, ensuring that it is well leveled and the biscuit layer is a bit thick. Once this is done, we reserve it.
  9. Now we make the pastry cream that we will use as a filling.
  10. For this, we infuse the milktogether with the piece of cinnamon and heat over medium heat in a saucepan until it begins to boil.
  11. On the other hand, beat the egg yolkswith the sugar, cornstarch and vanilla essence.
  12. Mix these three ingredients well until you get a homogeneous mixture.
  13. Finally, once the milk has boiled, turn off the heat, remove the cinnamon and add the yolk mixture.
  14. Stir everything until you get a thick mixture. Reserve and let the pastry cream cool at room temperature.
