  3. Mix the flour together with the chemical yeast and sift both on top of the previous mixture.
  4. Preheat the oven to 180ºC. Core and peel the apples. Part one of them in half and in turn into small pieces. Reserve the other two.
  5. Add the apple cubes to the cake batterand mix with a spatula.
  6. Line a rectangular mold with baking paper about 26×16 cm. Pour the apple pie batter on top.
  7. Tip: You can also use a round, heart-shaped or plum cake mold.

  9. Put the overlapping sheets on top of the cake one on top of the other. Bake at 180ºC with heat up and down for 50 minutes.
  10. If the surface is too dark, cover it with aluminum foil.
  11. Tip: Check that the sponge cake is ready by piercing it all the way in with a sharp knife. When you take it out, it should come out with no traces of dough.
  12. Let cool on a wire rack. If you want to give the cake a bit of shine, melt a tablespoon of jam with a few drops of water in the microwave.
  13.  Use a preferably light-colored jam, such as peach, apricot, or quince. Brush the surface of the cake with it.
  14. Consume your apple cake preferably the same day it is made.
  15.  If you have left over for the next day, store it in the fridge wrapped in plastic wrap.
  16. Remember that it is better to keep desserts with fruit in the fridge. You can also freeze it too.
