Anise and lemon cake recipe

Often, we feel like having a snack or breakfast with a delicious piece of cake but, at that moment, we don’t have it. It is then that we tend to think that making a cake is a slow task and that we don’t have enough time to do it right away. Well, with this recipe for aniseed and lemon cake that’s over!

Ingredients to make anise and lemon cake:

  • 250 grams of wheat flour
  • 170 grams of sugar
  • 150 grams of sunflower oil
  • 50 milliliters of milk
  • 3 eggs
  • 1 lemon (juice and zest)
  • 15 grams of baking powder (baking powder)
  • 2 tablespoons of anise in grain or matalahúva

How to make anise and lemon cake:

  1. Leave all the ingredients ready, so grate the lemon and squeeze it before starting. It should be noted that for this traditional cake we will use anise grain, as it used to be used for confectionery, especially in Andalusia areas.
  2. Place the flour, anise and baking powder or chemical yeast in a bowl and mix well. Reserve and preheat the oven to 180ºC with heat up and down.
  3. On the other hand, place the sugar and lemon zest in the blender glass. You can also use a chopper or an electric hand mixer, the important thing is to blend and flavor the sugar with the lemon. So, beat for 2 minutes.
  4. Mix the flavored sugar with the flour. Separately, beat the eggs for approximately 3 minutes and add the rest of the ingredients in this order: oil, milk and, finally, lemon juice. Try to go beating at the same time that you add these ingredients so that they emulsify and form a light and creamy mixture. Beat for 2 more minutes all together.
  5. Pour the liquid mixture over the dry ingredients and integrate it by making enveloping movements with a spatula. There should be light and airy dough, since it is this that makes the anise and lemon cake spongy.
  6. Place the dough in a mold about 22 cm in diameter previously greased with oil or lined with baking paper. Bake the lemon and anise cake for 25 minutes, placing the mold halfway up the oven.
  7. Tip: Depending on the type of oven, it may take a little longer, so we recommend checking its cooking by poking the cake with a toothpick.
  8. When it’s ready, leave it in the oven for about 5 minutes with the door ajar to keep it fluffy. This is a very effective trick to prevent the cake from going down when you take it out of the oven. And ready! Now you can enjoy this delicious recipe for aniseed and lemon cake with a warm coffee.

  10. Preparing a lemon glaze to give the cake a more intense point is an excellent idea, although this cake itself will leave you pleasantly surprised. Another option is to make a chocolate panache by melting some chocolate with butter. It is delicious and it is a coverage that fits perfectly with the flavors of the cake.
