Andalusian Consommé Recipe

Ingredients to make Andalusian Consommé:

  • 1 chicken of approximately 1.5 Kg.
  • Laurel
  • 1 carrot
  • 1 onion
  • 1 leek
  • 1 glass of sherry
  • 100 grams of seasonal mushrooms
  • Thyme
  • Olive oil
  • Salt
  • Pepper

How to make Andalusian consommé:

1.Remove the breasts and thighs from the chicken.

2.Wash the carcass well and put it in the oven with the sliced ​​onion at 190º C until golden brown.

3.Arrange the carcass and thighs on the fire covered with cold water. As soon as they boil, remove them and wash them in ice water.

4.We return them to the fire, covered with cold water. Add the toasted onion slices and a handful of salt to the water.

5.Make a bouquet garní with the white of the leek, carrot, bay leaf and thyme. Add to the consommé and boil gently for 1 hour.

6.Sauté the chopped breast meat with the diced mushrooms.

7.Season and reserve.
