Andalusia Soaking Recipe

The Andalusia remojón consists of a cod salad with orange that is very rich, fresh and full of flavors. This is a traditional Andalusia dish, however, like all traditional dishes; they have their variants depending on the area. For example, the remojón from Granada, the remojon from Córdoba and the remojón from Alpujarra are very popular in Andalusia. These elaborations are typical to make them in Lent, although they can be consumed all year round. Ingredients to make Andalusia Remojon:

  1. 2 oranges
  2. 250 grams of desalted cod
  3. 3 hard-boiled eggs
  4. 1 spring onion
  5. 100 grams of olives
  6. 1 splash of olive oil
  7. 1 pinch of salt
  8. 3 tablespoons of vinegar
  9. 1 pinch of black pepper

How to make Andalusia Soaking:

  • To start with the Andalusia remojón recipe, you must first soak the code if you bought it salted. You must have it 24 hours changing the water every 4 hours. On the other hand, put the eggs to cook for 10 minutes until they are hard, remove, let them cool and reserve. Next, cut the cod into strips or pieces, place a pan with a splash of oil over medium heat and leave for a few minutes, remove.
  • Tip: if you prefer, you can buy the cod in strips and that way it will be cheaper and it will desalt faster.
  • Peel the oranges and carefully remove the skin and clean the bitter white part well. Next, leave the segments very clean and cut into pieces, place them in a serving dish. If you wish, you can put the whole orange segments.
  • Place the pieces of cod on top of the orange.
  • Cut the spring onions into strips or pieces, and then peel the hard-boiled eggs.
  • Place all the ingredients in the dish and place the chopped onion on top of the cod. On the other hand, you should cut the hard-boiled egg into slices or pieces. Also add some olives to the orange salad; these can be black or stuffed.
  • Prepare the dressing for the orange salad with cod. To do this, in a bowl place a good stream of olive oil, vinegar and salt, mix well.
