Spanish recipes, like those of most countries, are of great variety and richness. Traditionally, in Spain many stew dishes have been prepared, a humble meal that provides a lot of energy.

If you want to learn how to make a stew, we show you how to make this Andalusia recipe with white beans, vegetables and chorizo. If you like spoon food, you will surely love this dish.

In our version of the Andalusia bean stew we have not included the black pudding, but if you like it, you can add it at the end of cooking, at the same time as the chorizo.

Ingredients to make Andalusia Bean Stew:

  • 400 grams of white beans
  • 80 grams of Chorizo
  • 1 unit of pepper
  • 1 unit of Onion
  • 1 unit of Tomato
  • 2 cloves of garlic
  • 2 bay leaves
  • 2 units of Potato
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 tablespoon of chopped Serrano ham

How to make Andalusia Bean Stew:

  1. We gather all the ingredients to prepare the Andalusia bean stew.
  2. It is very important to soak the white beans the day before preparation, approximately 12-15 hours.
  3. When preparing the dish, we drain the beans, wash them and place them in a pot.
  4. Add the tomato and the washed pepper, along with the peeled garlic, the onion, the Serrano ham in cubes and the bay leaf.
  5. It is important to remove the stem of the pepper and the inner seeds. We leave the tomato whole with skin.
  6. Add water to cover, put a little salt and ground black pepper and let the bean stew boil over medium heat for approximately 1 hour and a half.
  7. Tip: If after that time the beans are still very hard, let them cook a little longer before moving on to the next step.
  8. After that time, we take out the pepper, onion and tomato and beat them with the blender. If you like garlic you can also beat it or if not, remove it from the pot.
  9. Add the mixture of vegetables to the stew, move and add the potatoes, peeled and cut into medium wedges. Bring back to the boil and cook for 12 more minutes.
  10. Finally, add the chorizo ​​cut into slices of about 3 centimeters and let cook for 3 minutes.
  11. Serve immediately and enjoy. Bon Appetite!
