Anchovies in cider recipe

Ingredients to make anchovies in cider:

  • 5 kg of anchovies
  • 300 milliliters of cider
  • 1 fresh spring onion
  • 2 garlic cloves
  • a few branches of parsley
  • ¼ liter of virgin olive oil
  • salted

How to make anchovies in cider:

  1. We clean the anchovies, removing the central spine and the head, leaving only the loins, and lightly salt them.
  2. Chop the spring onion and garlic into brounoisse (small cubes) and fry the vegetables over low heat in a clay pot.
  3. When the onion is transparent, add the anchovies and heat them up and down on each side.
  4. Remove the anchovies from the casserole and reserve.
  5. Add the cider to the casserole, raise the heat, let the juice reduce for 5 minutes and mix the juice with a few circular movements of the casserole.
  6. Remove the casserole from the heat, add the anchovies and the chopped parsley, cover and let it rest for 10 minutes.
  7. We served hot.
