Ingredients to make anchovies in cider:
- 5 kg of anchovies
- 300 milliliters of cider
- 1 fresh spring onion
- 2 garlic cloves
- a few branches of parsley
- ¼ liter of virgin olive oil

How to make anchovies in cider:
- We clean the anchovies, removing the central spine and the head, leaving only the loins, and lightly salt them.
- Chop the spring onion and garlic into brounoisse (small cubes) and fry the vegetables over low heat in a clay pot.
- When the onion is transparent, add the anchovies and heat them up and down on each side.
- Remove the anchovies from the casserole and reserve.
- Add the cider to the casserole, raise the heat, let the juice reduce for 5 minutes and mix the juice with a few circular movements of the casserole.
- Remove the casserole from the heat, add the anchovies and the chopped parsley, cover and let it rest for 10 minutes.
- We served hot.
