Anchovies a la Cordobesa recipe

Ingredients to make Anchovies a la Cordobesa:

  • 20 units of anchovies in vinegar
  • 200 grams of flour
  • 2 units of beaten eggs
  • 200 grams of Breadcrumbs

How to make Anchovies a la Cordobesa:

  1. Take the anchovies one by one and without draining or cleaning them, pass them, first in flour, then in beaten egg, and finally in breadcrumbs, crush a little with the palm of your hands, put them in a flat container, (this operation it can be done before and leave it prepared in the fridge), at the moment of serving them we heat the container with the oil that is abundant better fryer we will wait until the oil begins to smoke, we are adding the battered anchovies.
  2. We will turn them over and wait until they are golden brown, take them out and put them to drain on paper or in a more homemade way, we take a deep plate and in the bottom we put a small plate upside down, so the oil they release will go at the bottom of the plate and will not be in contact with the frying, once drained to eat…, they will be crunchy and delicious, they will remind you a lot of Andalusia marinated fish.
